Ramen doesn’t have to be reserved for just noodles! Finding ways to mix it into other dishes is always fun, and the crunchy texture adds a delightful element to coleslaw.
This weekend our air conditioner decided to go out. On the hottest week of the summer. When it’s rained and is suuuper humid. Yeah, it’s been fun.
It wouldn’t be so bad if it wasn’t humid. But right now, it’s like walking through a cloud. Even with fans on and the windows open, somehow it’s still cooler outside. Talking with different ac guys and our warranty company has been a headache, and it’s still not fixed. It’s so hot in here, I don’t even want to cook. But I must, for we must eat. So, we’ve been eating a lot of cold things, especially popsicles.
Seeing as it is summer, cold dishes make sense, and one of my favorite comfort foods to eat in summer is coleslaw. Not exactly Asian, but what can I say, I like to make it my own! While I know the classic recipe for coleslaw is creamy and sweet, I actually prefer my coleslaw to be rather light. Instead of loading it up with mayo, just having a simple vinegar dressing keeps the dish healthy and just the right amount of tangy. But just because there isn’t any mayo does not mean there isn’t any flavor! With lots of sesame and sugar, this easy coleslaw is packed with flavor and just the right amount of crunch!
Depending on who you’re cooking for, this recipe might make a lot. Since I’m just feeding my husband, there’s no way we can eat all this at once, and this is not something I’d recommend for leftovers. (Soggy ramen? No thanks) But what I love about this coleslaw is it’s so easy to throw together! I keep everything prepped ahead of time in the fridge, then mix just what we need for the meal. Making it a serving at a time ensures the ramen is always crunchy, and it means you always have a quick side ready to make!
Recipe – Ramen Coleslaw:
– Mix the dressing by combining the sesame oil, sugar, soy sauce, salt and sesame seeds in a small bowl.
– Prepare the ramen pieces by breaking it apart with your hands into bite size chunks.
– When ready to serve, combine the coleslaw mix, green onion, dressing together in a large bowl. Let sit a few minutes for the flavor to soak in, then serve immediately. The ramen will get soggy over time, so it isn’t a dish to make ahead and save for later! (If you’re just cooking for yourself, I like to have everything prepped and make it as I go! I like to store the cabbage mix in one container, the ramen in another, and the dressing in another, then mix together just what I need for the meal!)
