Azuki (小豆, あずき) is a type of bean common in Japanese confectionery, but can be seen in savory dishes too too. It is most commonly sweetened and turned into a paste. Dried azuki beans are common in health food stores, Asian grocery stores and online. If using for desserts, you can even find them already sweetened in a can. If you are unable to find them, you can substitute any red bean, the smaller the better. Other beans might have a different cooking time than azuki beans, so be sure to cook the bean properly.
