Hijiki (羊栖菜, ひじき) is a very versatile type of seaweed, usually used only in Japanese home cooking. It’s usually sold in dried form. To use it, it typically needs to be soaked for an hour before using to soften. When soaked, it expands to 5 times it’s dried size, so don’t use too much of it, a little goes a long way!
