Mentsuyu (Noodle Soup Base)

Mentsuyu (めんつゆ, also 麺汁) is a condiment made from dashi, soy sauce, mirin and sugar. It’s a popular ingredient to use with noodles, either cold or as a base to flavor noodle soups.

Also called hontsuyu, it is found near the soy sauce in Asian grocery stores. It is also easy to make yourself!
