Ingredients

  • 1/2 pound ground beef, pork, or a mix of the two
  • 1 large onion
  • 1 large carrot
  • 1 tablespoon vegetable oil
  • 1 clove garlic
  • 1 cup chicken broth
  • 1 tablespoon curry powder
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups cooked rice
  • 1 tablespoon butter
  • 1 cup mozzarella cheese
  • 2 tablespoons parsley

Quick Directions

  1. Preheat the oven to broiling.
  2. Chop vegetables.
  3. Saute onions in skillet. Add the meat and cook until browned.
  4. Add the carrot, chicken broth, curry, ketchup salt, pepper and Worcestershire sauce. Cook for 5 minutes.
  5. Butter the ramekins, then layer the rice, sauce, cheese, and parsley.
  6. Broil for 5 minutes.

The Story

Curry and rice, the perfect combination! Curry doria (カレードリア) consists of a thick curry sauce over a steaming bed of rice. To make it even better, it’s covered with melted cheese and a lightly browned top!

As you may have guessed by the name, doria is not a traditional Japanese dish. It was introduced to Japan by a Swiss chef as a seafood rice casserole with a white sauce, but has since then been transformed in many different varieties. My favorite adds some curry to the mix, because of course, curry makes everything better!

Although in my mind I tend to think casserole = long cooking time, curry doria comes together really quickly since the separate components are all cooked separately. I love how easy this dish comes together, and it only needs a few minutes in the oven to melt the cheese! If you don’t have an oven, you can even just cover it with plastic wrap and microwave it for a minute or two until the cheese melts, how easy is that?! And a little tip, it makes for DELICIOUS leftovers, so if you make extra ahead of time, the curry flavor soaks into the rice, making an even richer flavor the next day!

Recipe – Curry Doria:

– Preheat your oven on the broiling setting. Prep your veggies by chopping the onion into a small dice and the carrot into thin slices.

– Place a large skillet on the stove over medium high heat. Add the oil to the pan, then add the garlic and onion. Cook for 5 minutes, stirring occasionally, until the onion starts to brown.

– Add the meat to the pan and cook, stirring occasionally, until the meat has browned. Drain any excess fat from the pan, then return to the stove.

– Add the carrot, chicken broth, curry, ketchup, salt, pepper, and Worcestershire sauce to the pan. Cook for about 5 minutes until the sauce has reduced.

– While the sauce is cooking, prepare your pan. Use the butter to grease the inside of a large casserole dish or individual ramekins.

– Place the cooked rice into the bottom of the casserole dish, then spoon the curry mixture on top.

– Add the shredded mozzarella and parsley to the top of the dish.

– Place the casserole in the oven for 3 to 4 minutes until the cheese has melted. Serve immediately.
